The history of Don Papa rum

The story of Don Papa Don Papa was born in the Philippines in 2012. Since then, this molasses rum created by Stephen Carroll has established itself as a real " bestseller". Don Papa invites you to discover a new land, that of the island of Negros, commonly called "Sugarlandia". Don Papa owes its success to its very sweet aromatic profile, dominated by citrus notes, and its almost syrupy texture. A style which gives it a real seduction, especially among new lovers of sugar cane cognac.

Don Papa 10 Years Rum comes from the island of Negros in the Philippines, where it is made from local molasses, known for its sweetness and richness. For those unsure whether the Philippines is now one of the top 10 sugarcane producing countries in the world, rum production only started 150 years ago only to stop temporarily during the ban.
The rum don papa 10 years old is made from the best canes of the archipelago. The molasses used to make this rum is fermented before being column distilled. This Filipino rum is aged at the foot of the Kanlaon volcano in old American oak barrels containing bourbon. During this process, the 7-year-old Don Papa rum achieves the fruity aroma which is characterized by its lingering citrus notes. This 7 year old child is part of a pastry and candied register.

When he fell in love with the Philippines, Stephen Carroll was particularly amazed at the wealth of his country. In fact, three grams of sugar per liter is added to rum before it is put into barrels to ripen for a long time. The name Don Papa is a tribute to Dionisio Magbuelas, also known as Papa Isio, a true revolutionary who shaped the history of the Philippines in the 19th century.

A foreman in a sugar cane plantation, but also shamans and healers, became the leader of the national revolt which led the country to its independence in 1896. Today, his portrait adorns the bottles of Don Papa. A great way to discover part of the history of the Philippines, but also to maintain the rebellious spirit of the brand.

Rum don papa 10 years: a rum 100% Phillippines

This edition consists of blended rum, which results from the fermentation of a molasses rich in sugar and is distilled in column stills. It is then aged for 10 long years on the island of Negros at the foot of the Kanlaon volcano in old American oak barrels that contain bourbon.
These barrels were “freshly roasted” and lightly burned inside to produce vanilla notes with gourmet and fruity aromas. Due to the climate, the proportion of angels in the Philippines is very high and the distillery does not want to fill the barrels with young rum. The result is a rum that focuses more on the aromas, with a dark, almost black color.
